My Mama talking about Pearl Harbor



What she doesn't discuss is the beauty of the stars she remembers that night, the shock of the house that exploded from friendly fire during the attack (with the resident in the home), and the sheer terror that drove her to shake in her boots, sleep with her parents, and her deep sense of her lost innocence.  But she does tell a damn good story of what happened that day... Lest we forget.

Eggplants stuffed with Turkey and Mushrooms

2 sm. eggplants, split in half lengthwise 1 pound ground turkey 2 tbsp. cooking oil 6 tbsp. sweet butter or magarine 1 tbsp. chopped shallots 1/2 lb. mushrooms, chopped 1 tsp. minced garlic (more if desired) 1 tbsp. tomato sauce 1 tbsp. salt 1 tsp. white pepper 4 tbsp. bread crumbs 1 egg, beaten 1 tbsp. chopped parsley 1 tbsp. grated Parmesan cheese Sprinkle cooking oil over eggplant halves; bake, uncovered in preheated 400 degree oven for 15 minutes. Melt butter in saucepan. Add shallots, saute 5 minutes (do not brown). Add mushrooms, saute 5 minutes, add garlic, saute 2 minutes. Stir in tomato sauce, salt and pepper. Stir in ground turkey and sautee until done. Remove eggplant pulp and chop finely. Add mushroom mixture and blend over stove. Mix in bread crumbs, egg and parsley. Fill eggplant shells with mixture. Sprinkle with grated cheese and place in preheated 450 degree oven 10 minutes or until brown.

Sauteed Chicken Breast- Bone In

INGREDIENTS 1/8 teaspoon ground black pepper 1/8 teaspoon paprika 2 tablespoons all-purpose flour 4 bone-in chicken breast halves 2 tablespoons olive oil 2 small red onions, cut into quarters 4 Cloves Garlic-pressed 1 1/2 cups Chicken Stock 3 tablespoons lemon juice 1 tablespoon chopped fresh oregano leaves 1 tablespoon chopped fresh thyme leaves DIRECTIONS Heat the oven to 350 degrees F. Combine the black pepper, paprika and flour in a small bowl. Coat the chicken with the flour mixture. Heat the oil in a 12-inch oven-safe skillet or Dutch Oven over medium-high heat. Add the chicken and cook until it's well browned on all sides. Remove the chicken from the skillet. Add the onions and garlic to the skillet and cook for 5 minutes. Add the stock, lemon juice and oregano and heat to a boil. Return the chicken to the skillet. Cover the skillet. Bake at 350 degrees F for 20 minutes.
