Braised Chicken with Grainy Mustard

Ingredients
6 chicken thighs, about 3 pounds
Kosher salt and freshly ground black pepper
2 Tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, thinly sliced
1 cup chicken stock
1/2 cup white wine or vermouth
1/3 cup grainy mustard
1 Tablespoon finely chopped thyme


Instructions
  1. Season chicken with salt pepper.
  2. Heat oil in a large pot and in batches (so you don’t crowd the pot) cook chicken until browned on both sides, 4 to 5 minutes a side, then remove to a plate.
  3. Add chopped onion and garlic – cook about 3 minutes until softened. Then add chicken stock, white wine, mustard and thyme. Mix well, bring to a boil, put the chicken back in, cover and put in a 350 degree F oven until cooked through – about an hour.
