Salmon with Dill Sauce

4 6 ox skinless salmon fillet salt and pepper olive oil 1/2 cup Greek yogurt 2 tbs fresh lemon juice 2 tbs chopped capers 2 tbs chopped fresh dill Season salmon with salt and pepper on both sides. Cook in olive oil over medium heat until opaque (5-7 minutes per side). Mix together yogurt, lemon juice, capers, and dill. Season with salt and pepper. Serve a dollop over the salmon. Serve with fresh steamed broccoli. Yogurt/dill sauce can be used as a dipping sauce for broccoli!

Grilled Garlic-Basil Porkchops

Ingredients 4 (8 ounce) pork chops 1 lime, juiced ( I juiced a few more) 4 cloves garlic, minced 1/4 cup chopped fresh basil salt and black pepper to taste Directions 1. Toss the pork chops with the lime juice in a bowl until evenly covered. Toss with garlic and basil. Season the chops to taste with salt and pepper. Set aside to marinate for 30 minutes. 2. Preheat an outdoor grill for medium heat, and lightly oil the grate. A yummy way to enhance this is press cloves of garlic into Olive Oil and then microwave for 30 seconds... nice way to prep the grill) 3. Cook the pork chops on the preheated grill until no longer pink in the center, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees) Served with Tossed Salad and Corn on the Cob. YUM!

Braised Lamb Shanks

I used a slow cooker because lamb shanks can be a little tough... These are fall off the bone good! Ingredients: * 1 yellow onion, diced * 2 celery stalks, diced * 2 carrots, peeled and diced * 3 garlic cloves, crushed * 2 cups chicken stock * 1 cup peeled, seeded and chopped tomatoes * 2 Tbs. tomato paste * 1 tsp. chopped fresh thyme * 1 bay leaf * 4 lamb shanks, external fat trimmed * Salt and freshly ground pepper, to taste * 2 Tbs. olive oil * 1 cup red wine Directions: Put the onion, celery, carrots, garlic, stock, tomatoes, tomato paste, thyme and bay leaf in a slow cooker and stir to combine. Season the lamb shanks with salt and pepper. In a large sauté pan over medium-high heat, warm the olive oil until nearly smoking. Add the shanks and brown on all sides, about 5 minutes total. Baked Chicken Thighs with Roasted Grape Tomatoes

Baked Chicken: 1 cup butter 12 Chicken thighs 1 cup flour 2 tsp. salt 1/2 tsp. pepper 2 tsp. paprika 1 recipe sauce (blend together and let stand for several hours): 1 small clove garlic, grated 1/4 tsp. salt 1/4 cup salad oil 1/2 cup lemon juice 3 tbsp. onion, chopped 1/2 tsp. pepper 1/2 tsp fresh thyme Heat butter in skillet. Shake thighs in mixture of flour, salt, pepper, and paprika. Arrange chicken in skillet, skin side down and fry to golden brown. Transfer chicken to baking dish. Cover with sauce. Bake at 350 degrees for 45 minutes. Roasted Grape Tomatoes: 2 cups grape tomatoes 2 tsp. olive oil 2 tbsp. chopped parsley 1 tsp. grated fresh lemon rind 1 tbsp. fresh lemon juice 1 tbsp. capers 1/8 tsp. sea salt 1/8 tsp. freshly grated pepper Combine tomatoes and oil in an 8 inch baking dish. Toss gently. Bake at 425 degrees for 18 minutes. Combine tomato mixture and remaining ingredients in a serving bowl and stir gently. Serve with chicken, salad, and cous cous.

Lemon Chicken Fingers with Curry

Ingredients * 1/2 teaspoon paprika * 1/2 teaspoon salt * 1/4 teaspoon pepper * 3 large boneless, skinless chicken breasts, cut into 2-inch pieces * 2 eggs, slightly beaten * 1 cup Italian seasoned bread crumbs * 1/2 cup sugar * 1/2 cup lemon juice * 1 1/2 teaspoons curry powder Directions 1. Preheat oven to 400 degrees F (200 degrees C). 2. In a bowl, stir together paprika, salt, and pepper. Sprinkle seasoning over chicken pieces. Dip pieces in egg, then dredge in bread crumbs. Arrange chicken pieces in a single layer in an aluminum foil-lined 15x10-inch jelly roll pan. 3. Bake in preheated oven for 15 minutes, turning once. 4. In a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes. 5. Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.
